These coconut treats are a great snack and treat to have on hand, and they taste like dessert! You need to keep them in the freezer to keep from melting. This way anytime you need something sweet, they are there for you. Even better they are great for your health. It is recommended to take 1 Tablespoon of coconut oil for every 50 lbs. These coconut treats are an easy way to take coconut oil every day. Taking good fats will increase your HDL level and help naturally fight the “bad fat” (LDL) in your system.
Coconut oil has the same fatty chain that our brain is made up of. This fatty chain is found in mothers milk and coconut oil. Our brain is fully developed at age 6, thus is is a great supplement and treat to give to children until age 6.
Recipe adapted from Coconut Treat
Coconut Lemon Zingers
- 1 Cup coconut oil
- Zest of one lemon
- 5 Drops Liquid stevia
- 5 drops lemon essential oil
Soften coconut oil in a glass bowl in a pot of hot water. Do NOT melt all the way to where the oil is clear and runny (It will take longer to freeze if you do, and ingredients will settle at the bottom) Just enough so you can stir it- like a runny think pudding consistency, just so you can stir it. Add lemon oil, zest and sweetener.
Mix well and place in small ice cube tray then put in fridge to cool. Store in freezer in a freezer baggie, or airtight sealed container. If you want them sweeter or more lemony you can re- melt and add more. You can can these on a candida cleanse.
