Lemon Coconut Fat Bombs: Simple, Delicious 5-Ingredient Zingers

These lemon coconut fat bombs (I call them Coconut Lemon Zingers!) are treats and a great snack to have on hand, and they taste like dessert! Even better—they are great for your health! Just keep them in the freezer to keep from melting. Anytime you need something sweet, they are there for you.

What Are Fat Bombs?

If you have never heard of fat bombs, they are little bites made mostly of healthy fats like coconut oil, nut butters or cacao butter. They are popular with keto and low-carb eaters because they keep you full and give you steady energy without sugar. These lemon coconut fat bombs are the simplest version I make, and they taste like a little bite of lemon cheesecake.

Why You Will Love These Lemon Coconut Fat Bombs

  • Only 5 ingredients. Coconut oil, lemon zest, stevia, lemon essential oil and vanilla. That is it.
  • No sugar. They are sweetened with stevia, so they satisfy that sweet craving without the sugar crash.
  • Ready in minutes. Mix, pour into a tray and let the freezer do the rest.
  • Kid approved. My kids think they are candy, and I love that they are getting good fats.

Are Lemon Coconut Fat Bombs Good for You?

These coconut treats are an easy way to take coconut oil every day (it is recommended to take one tablespoon of coconut oil for every 50 pounds). Taking good fats will increase your HDL level and help naturally fight the “bad fat” (LDL) in your system. In addition, coconut oil has the same fatty chain that our brain is made up of, the same fatty chain that is also found in mother’s milk. At age 6 a child’s brain reaches 95% of its adult size then fully develops usually by age 25, thus coconut is a great supplement and treat to give to children.

Tips for the Best Lemon Coconut Fat Bombs

  • Do not fully melt the coconut oil. Soften it to a pudding consistency so the zest stays mixed in instead of sinking to the bottom.
  • Use small molds. A mini ice cube tray or silicone candy mold makes the perfect one-bite size.
  • Keep them frozen. Coconut oil melts around 76°F, so store them in the freezer and grab one when you need it.
  • Taste and adjust. Want more zing? Re-soften the mix and add a little more zest or sweetener.

Ways to Switch Them Up

Once you have the base down, the flavors are endless. Coconut Lemon Zingers
Ingredients
  • 1 cup coconut oil
  • Zest of one lemon
  • 5 drops liquid stevia
  • 5 drops lemon essential oil
  • 1/2 teaspoon Vanilla
Instructions
  1. Soften coconut oil in a glass bowl in a pot of hot water*
  2. Add lemon oil, zest and sweetener.
  3. Mix well and place in small ice cube tray. Place in fridge to cool.
  4. Store in freezer in a freezer baggie, or airtight sealed container.
Notes
*Do NOT completely melt the coconut oil to where it is clear and runny (it will take longer to freeze if you do, and ingredients will settle at the bottom). Melt it until it is about a pudding consistency, just enough to stir it.

If you want them sweeter or with more of a lemon taste, you can re-melt and add more.
You can eat these on a Candida cleanse.
