In all honesty, this is like the Zuppas Yucatan Chicken Lime soup, just with some variations. The lime broth is so heavenly, you can make it a veggie or chicken broth, and make sure you use the cilantro at the end, the fresh cilantro adds so much flavor.

In large soup pot over medium heat, put 3 T olive oil and add

  • 2 chopped carrots
  • 1 diced white onion
  • 1 diced zucchini
  • 1 diced yellow squash

Saute till onion is translucent, and then add:

  • 1/2 tsp crushed garlic
  • 1/4 tsp cumin
  • 1/2 tsp sea salt or real salt
  • 4 cups veggie or chicken broth
  • 3 Tbsp fresh lime juice
  • 3 small fresh diced tomatoes
  • 1/8 tsp dried thyme
  • 1/8 tsp dried oregano
  • 1/8 tsp cayenne pepper
  • 1/8 tsp onion powder
  • 1/8 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1/2 cup fresh cilantro (add in right before serving)

Dice and cut up 2 ripe avocados and set aside to add as topping when serving.
